Honey marinated roast pork with winter vegetables

INGREDIENTS

1-1.5 kg pork rump or topside roast, rind removed and trimmed of fat
1 cup cloudy apple juice
½ cup honey
1 kg winter vegetables, peeled and chunky cut (potatoes, pumpkin, turnip, sweet potato, baby carrots, baby onions, bulbs of garlic)
2 tblsp olive oil

To serve:
¼ cup honey
Apple sauce

METHOD

  1. Pre-heat oven to 180C.

  2. Combine the apple juice and honey; pour into a large shallow non-metallic dish. Score the surface of the roast and prick the flesh. Roll the pork in the marinade and allow marinating for up to 4 hours.

  3. Place the roast in to a baking dish and bake in the centre of a pre-heated oven for 15 minutes per 500 g.

  4. Toss the vegetables in olive oil. Place in a baking dish and bake in the top half of the pre-heated oven for 1 hour.

  5. Remove the roast from the oven cover and rest for 10 minutes.

  6. Place roast and vegetables onto a large serving platter and drizzle with honey. Serve with apple sauce and gravy.
