Cooking Method: Roast
Pre-heat oven to 180C.
Combine the apple juice and honey; pour into a large shallow non-metallic dish. Score the surface of the roast and prick the flesh. Roll the pork in the marinade and allow marinating for up to 4 hours.
Place the roast in to a baking dish and bake in the centre of a pre-heated oven for 15 minutes per 500 g.
Toss the vegetables in olive oil. Place in a baking dish and bake in the top half of the pre-heated oven for 1 hour.
Remove the roast from the oven cover and rest for 10 minutes.
Place roast and vegetables onto a large serving platter and drizzle with honey. Serve with apple sauce and gravy.
