Thread the pork onto the soaked skewers alternating between the red capsicum and zucchini slices.
Brush each skewer with a little oil.
Heat a griddle pan or BBQ plate on medium heat for 3-4 minutes. Cook pork skewers for 3-4 minutes, turning frequently.
Brush each skewerliberally with honey soy marinade and continue to cook for a further 3-4 minutes, turning and basting frequently.
Serve kebabs over stir fried vegetable or noodles drizzled with honey.
Note:
Do not marinate the kebabs prior to cooking as the honey in the sauce will burn if cooked for too long.
