Moroccan pork steaks

INGREDIENTS

4 lean pork loin steaks, thick cut
1 tblsp olive oil
1-2 tblsp Moroccan spice blend
250 g cous cous
500 mL chicken stock, boiling
2 tblsp butter
1 lemon rind and juice
1 roasted red capsicum
ΒΌ cup currants
Lemon wedges to serve

METHOD

  1. Pre-heat BBQ or griddle pan for 10 minutes on a medium heat.

  2. Brush each pork loin steak with a little oil and sprinkle each side with Moroccan spice place onto the pre-heated BBQ and cook 2-3 minutes each side until cooked the way you like it. Remove and allow to rest in a warm place.

  3. Whilst pork steak is cooking combine the cous cous, chicken stock, and butter in a large bowl and mix well until butter is dissolved. Cover and allow to stand until cous cous is soft and hydrated.

  4. Slice the roasted capsicum into thin strips. Toss the lemon rind, capsicum, currants and prepared cous cous together. Slice pork steaks and serve decoratively on a bed of cous cous garnish with a wedge of lemon.

Notes:

Cous cous may be replaced with mashed potato or polenta.
