Orange and chilli pork medallions

Preparation Time 5 minutes (plus 30 minutes marinating time)

INGREDIENTS

4 lean pork medallions, leg or butterfly steaks
2 tsp finely grated orange rind
60 mL (ΒΌ cup) fresh orange juice
1 tsp red chilli paste
1 tsp finely grated ginger

METHOD

  1. Combine marinade ingredients in a non-metallic bowl, add the pork, cover and chill for 30 minutes. Turn once.

  2. Preheat the grill to medium-high and cook the pork for 2-3 minutes each side depending on thickness.

  3. Rest the pork for a few minutes before serving.

  4. Serve with steamed new potatoes and seasonal vegetables
