Pork and char-grilled vegetable salad with a balsamic dressing

INGREDIENTS

4 pork rump or leg steaks, trimmed of fat 2-3 cm thick
1 tblsp oil
2 cloves garlic, crushed
1 tsp rosemary leaves, chopped
500 g mixed vegetables, sliced (zucchini, sweet potatoes, pumpkin, capsicum, eggplant etc)
100 g mixed salad leaves
ΒΌ cup balsamic dressing

METHOD

  1. In a small bowl combine the oil, garlic and rosemary.

  2. Peel and slice the vegetables thinly, brush the vegetables with a little garlic and herb oil and cook on the griddle for 2-3 minutes and repeat until all vegetables are grilled. Keep warm.

  3. Brush the pork with a little garlic and herb oil and cook on the griddle plate for 3-4 minutes each side on a medium heat. Remove and rest for 2 minutes.

  4. Slice pork into thick diagonal slices. Stack vegetables and lettuce alternately in individual salad bowls and arrange pork over the top.

  5. Dress with balsamic dressing and serve
