In a small bowl combine the oil, garlic and rosemary.
Peel and slice the vegetables thinly, brush the vegetables with a little garlic and herb oil and cook on the griddle for 2-3 minutes and repeat until all vegetables are grilled. Keep warm.
Brush the pork with a little garlic and herb oil and cook on the griddle plate for 3-4 minutes each side on a medium heat. Remove and rest for 2 minutes.
Slice pork into thick diagonal slices. Stack vegetables and lettuce alternately in individual salad bowls and arrange pork over the top.
Dress with balsamic dressing and serve
