Cooking Method: Stir Fry
Heat half the oil in a wok over high heat. Stir fry the pork strips, garlic and onion until well browned for 3-4 minutes. You may need to do this in several batches. Set aside in a bowl.
Heat the remaining oil and stir fry the vegetables for 3-4 minutes.
Stir in the satay and soy sauce. Return the pork strips to the wok, tossing to coat with sauce.
Serve hot, garnished with roasted peanuts accompanied with steamed rice, toasted roti bread and cucumber salad.
Note:
If you have a nut allergy, peanut satay sauce may be replaced with Tahini paste, chilli and soy sauce. Soy grits maybe used in place of peanuts.
